Roasted Sweet Potatoes

This simple side dish goes together quickly and can be baking while you are preparing the rest of your meal.

Ingredients

  • 2 pounds sweet potatoes peeled and diced into 1/2″ chunks
  • 1 teaspoon garlic powder
  • ¼ – ½ teaspoon cayenne pepper to taste
  • ¼ tsp salt
  • 1 tsp pepper
  • 2 Tablespoons olive oil
  • 2 tablespoons finely chopped cilantro for garnish

Instructions

  • Preheat oven to 425℉.
  • Place chopped sweet potatoes on baking tray with sides.
  • Add all remaining ingredients to sweet potatoes and toss with spoons until evenly coated.
  • Spread out into single layer.
  • Bake until starting to brown, about 10-12 minutes. Remove from oven, toss potatoes, and spread into single layer again. Place back in oven until crisp, about 8 minutes.
  • Top with cilantro for garnish.

Notes

  • These are a great alternative to French fries!
  • They make a great base for breakfast when paired with additional veggies, an egg, and sriracha yogurt sauce.
