Oven Roasted Okra with Ranch Dressing
Tender, crispy okra with a creamy, tangy homemade ranch dressing makes a perfect veggie appetizer or side.

Ingredients
Okra:
- 12 Ounces okra cut in half length-wise – cut larger okra in half widthwise as well.
- 1 ½ Tablespoons olive oil
- ¼ teaspoon salt
- ½ teaspoon pepper
- ½ teaspoon garlic powder
Ranch Dressing
- ¼ Cup Greek yogurt
- 2 cloves black garlic minced
- 1 Tablespoon pickle juice
- 1 teaspoon dried dill
- ¼ teaspoon garlic powder
- ½ teaspoon honey
- ⅛ teaspoon cayenne pepper
- ⅛ teaspoon ground cumin
- ½ teaspoon pepper
Instructions
- Preheat oven to 425℉. Add okra to baking tray. Drizzle with olive oil and sprinkle with salt, pepper, and garlic powder. Toss to coat evenly and then spread in single layer cut-side down. Roast for 20-30 minutes until cut sides are browned (check for doneness by carefully turning a couple of okra pieces over. They should be well-browned but not burned).
- While okra is cooking make ranch by combining all dressing ingredients & stirring to blend.
- Serve okra with ranch for dipping.
Notes
- The dressing also is great on salads or with raw vegetables.
- Be careful of pickle ingredients (for pickle juice in recipe). Pickles often contain fillers and natural flavors.
