Roasted Carrots with Ghee, Honey, and Black Garlic
These roasted carrots are a delicious, quick, and easy side.

Ingredients
- 24 ounces petite baby carrots
- 2 Tablespoons Ghee unsalted, melted
- 2 Tablespoons olive oil
- ½ Tablespoon honey
- 8 cloves black garlic minced
- ½ teaspoon salt
- 1 teaspoon pepper
- 1 Tablespoon black sesame seeds for serving
Instructions
- Preheat oven to 425℉
- Place carrots on baking tray, drizzle with melted ghee, olive oil, and honey. Add black garlic, salt, and pepper and toss to coat evenly.
- Bake for 20-30 min until carrots begin to brown on bottom and are tender.
- Sprinkle with sesame seeds to serve.
Notes
- I like to use petite baby carrots to make cook time faster. You can sub regular baby carrots or even chopped whole carrots, but you may need to increase cook time.
- If you don’t have ghee on hand, you can substitute with butter.
- Feeling like a little spice? Add in some red pepper flakes
