Roasted Carrots with Ghee, Honey, and Black Garlic

These roasted carrots are a delicious, quick, and easy side.

Roasted Carrots with Ghee, Honey, and Black Garlic

Ingredients

  • 24 ounces petite baby carrots
  • 2 Tablespoons Ghee unsalted, melted
  • 2 Tablespoons olive oil
  • ½ Tablespoon honey
  • 8 cloves black garlic minced
  • ½ teaspoon salt
  • 1 teaspoon pepper
  • 1 Tablespoon black sesame seeds for serving

Instructions

  • Preheat oven to 425℉
  • Place carrots on baking tray, drizzle with melted ghee, olive oil, and honey. Add black garlic, salt, and pepper and toss to coat evenly.
  • Bake for 20-30 min until carrots begin to brown on bottom and are tender.
  • Sprinkle with sesame seeds to serve.

Notes

  • I like to use petite baby carrots to make cook time faster. You can sub regular baby carrots or even chopped whole carrots, but you may need to increase cook time.
  • If you don’t have ghee on hand, you can substitute with butter.
  • Feeling like a little spice? Add in some red pepper flakes
