Place carrots on baking tray, drizzle with melted ghee, olive oil, and honey. Add black garlic, salt, and pepper and toss to coat evenly.
Bake for 20-30 min until carrots begin to brown on bottom and are tender.
Sprinkle with sesame seeds to serve.
Notes
I like to use petite baby carrots to make cook time faster. You can sub regular baby carrots or even chopped whole carrots, but you may need to increase cook time.
If you don't have ghee on hand, you can substitute with butter.
