Miso glazed carrots

Ingredients

  • 8 medium carrots about 1 lb, cut into sticks
  • ¼ teaspoon salt
  • ½ teaspoon pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon ground ginger
  • ½ Tablespoon extra virgin olive oil

Glaze

  • ½ Tablespoon extra virgin olive oil
  • 1 Tablespoon miso
  • 1 Tablespoon water

Toppings

  • 2 Tablespoons chopped cilantro
  • 2 teaspoons black sesame seeds
  • 3 pinches saffron threads

Instructions

  • Preheat oven to 425℉
  • Line a baking tray with parchment and add carrots to tray.
  • Sprinkle with salt, pepper, garlic powder, and ground ginger and drizzle with olive oil. Toss to coat. Evenly spread carrots across pan.
  • Bake 15 minutes. While carrots are beginning to roast, make Glaze by adding all Glaze ingredients to a small bowl and whisking together.
  • After carrots have roasted for the first 15 minutes, remove from oven, pour glaze over them, and carefully toss with spoons to evenly coat. Bake 5-8 more minutes until carrots are tender.
  • Before serving, top with Toppings.
