Ingredients
- ½ Cup cilantro leaves packed
- ⅛ medium red onion
- 2 cloves garlic
- ¾ Cup diced mangos small dice
- 1 Cup spinach leaves stems removed and sliced thin
- 1 medium poblano pepper diced small
- 2 teaspoons lime juice freshly squeezed
- ½ teaspoon paprika
- ½ teaspoon chili powder
- ⅛ teaspoon garlic powder
- ⅛ teaspoon salt
- ½ teaspoon pepper
Instructions
- Place cilantro, red onion, and garlic cloves in a mini food processor. Process until minced (can also use a regular food processor or finely dice by hand). Add these ingredients to a medium-sized mixing bowl.
- Add all remaining ingredients to the mixing bowl and toss with spoons to evenly blend.
Notes
