This Mango Chili Spinach Salad balances sweet mango with warm spice plus fresh cilantro, tender spinach, and crunchy poblano peppers. It’s perfect as a side dish or a flavorful topping for tacos.
Place cilantro, red onion, and garlic cloves in a mini food processor. Process until minced (can also use a regular food processor or finely dice by hand). Add these ingredients to a medium-sized mixing bowl.
Add all remaining ingredients to the mixing bowl and toss with spoons to evenly blend.
