Ingredients

  • ½ Cup cilantro leaves packed
  • medium red onion
  • 2 cloves garlic
  • ¾ Cup diced mangos small dice
  • 1 Cup spinach leaves stems removed and sliced thin
  • 1 medium poblano pepper diced small
  • 2 teaspoons lime juice freshly squeezed
  • ½ teaspoon paprika
  • ½ teaspoon chili powder
  • teaspoon garlic powder
  • teaspoon salt
  • ½ teaspoon pepper

Instructions

  • Place cilantro, red onion, and garlic cloves in a mini food processor. Process until minced (can also use a regular food processor or finely dice by hand). Add these ingredients to a medium-sized mixing bowl.
  • Add all remaining ingredients to the mixing bowl and toss with spoons to evenly blend.

Notes

  • This makes a delicious side. It’s also a great topping for tacos.
  • Adding grilled chicken or fish to this salad turns it into a quick, healthy meal.
