This Skillet Chicken Stew is a simple, yet deeply satisfying, dish filled with juicy chicken, sweet carrots, and fresh peas simmered in a luxuriously creamy, but healthy, sauce. Made with bone broth, cream, and a hint of nutmeg, the sauce adds a rich depth of flavor without feeling heavy. A splash of white wine enhances the dish’s complexity, while thyme brings a cozy, herbaceous warmth. Everything comes together in less than an hour, making it an easy and nourishing option for busy nights.

Ingredients

Chicken and Veggies

  • 2 Tablespoons extra virgin olive oil
  • 2 Cups diced carrots fresh (about 4 large)
  • 1 medium onion diced
  • 1.5 pounds chicken breasts diced
  • 2 tablespoons white wine can sub with 1 tablespoon champagne vinegar and 1 tablespoon water or 2 tablespoons water
  • 2 Cups green peas fresh if available
  • ¼ teaspoon salt
  • ½ teaspoon pepper

Sauce

  • 2 Tablespoons ghee
  • 2 Cups milk
  • 1 Cup cream
  • 2 Cups chicken bone broth
  • 1 teaspoon dried thyme leaves
  • ¾ teaspoon salt
  • 1 teaspoon pepper
  • ¼ teaspoon nutmeg
  • ½ Cup spelt flour

Instructions

  • Cook Chicken and Veggies: Heat olive oil in large 3 ½-4 quart skillet, brasier, or sauté pan over medium heat. Add carrots, onions, and diced chicken to skillet. Turn heat to medium-high and, stirring occasionally, cook until onions are translucent and chicken is cooked through (about 8-10 min). Add white wine and stir to deglaze pan. Add peas, salt, and pepper and stir to heat through. Turn heat down to medium.
  • While Chicken and Veggies and cooking, make Sauce: In medium saucepan over medium heat, melt ghee. Whisk in milk, cream, and bone broth. Add thyme, salt, pepper, and nutmeg and stir to combine. Whisk until steamy, but not simmering (about 3-6 minutes). Whisk in spelt flour until no lumps remain.
  • Put it together: Carefully pour sauce into skillet with Chicken and Veggies. Stir to evenly combine. Continue to heat, stirring frequently until bubbly and thick (about 5-7 minutes).

Notes

  • Fresh peas are so delicious! Use them when available, but frozen peas work well also.
