Hearty Chili with Chorizo Spice

This Hearty Chili with Chorizo Spice combines lean ground meat, vibrant vegetables, and a rich roux for a delicious comfort food experience. Enhanced with diced tomatoes, mixed beans, and a touch of dark chocolate, it's perfect served with whole grain tortilla chips or cornbread. This flavorful chili is easy to make and ready in just over an hour!

Ingredients

  • 1 recipe Roux
  • 2 Tablespoons extra virgin olive oil
  • 2 medium onions diced
  • 1 medium red or yellow bell pepper diced
  • 2 large garlic cloves minced
  • 1 pound lean ground meat
  • 2 Tablespoons Chorizo Spice Blend
  • ½ teaspoon salt
  • ½ teaspoon pepper
  • 28 ounces canned diced tomatoes
  • 8 ounce can of tomato sauce
  • 30 ounces canned mixed beans drained and rinsed
  • 1 Tablespoons coconut sugar
  • 1 ounce 70% dark chocolate chopped
  • 1 can beer good quality
  • ½ Cup grated aged gouda shredded, optional

Instructions

  • Prepare Roux according to linked recipe. Set aside.
  • Heat olive oil over medium-high in 5-quart pot. Add onions, bell pepper, garlic, and ground meat to the pot and cook until meat is done and veggies are cooked, breaking up the meat with a wooden spoon as you go, about 7-10 minutes.
  • Add Roux and stir in for 1 min. Add Chorizo Spice Blend and stir in.
  • Add diced tomatoes, tomato sauce, beans, coconut sugar, chocolate, and beer. Stir to blend evenly. Cover and bring to simmer. Once simmering, uncover, reduce heat, and continue simmering, stirring occasionally, for 30 min or until desired thickness is reached.
  • Ladle into individual serving bowls and top with aged gouda, if desired.

Notes

  • For ground meat, I typically use elk, antelope, or venison, but grass-fed beef or turkey work well also.
  • I serve this with whole grain tortilla chips or corn muffins.
  • I put cayenne on the table so everyone can get their desired amount of heat.
  • You can use non-alcoholic beer instead of regular.
