Prepare Roux according to linked recipe. Set aside.
Heat olive oil over medium-high in 5-quart pot. Add onions, bell pepper, garlic, and ground meat to the pot and cook until meat is done and veggies are cooked, breaking up the meat with a wooden spoon as you go, about 7-10 minutes.
Add Roux and stir in for 1 min. Add Chorizo Spice Blend and stir in.
Add diced tomatoes, tomato sauce, beans, coconut sugar, chocolate, and beer. Stir to blend evenly. Cover and bring to simmer. Once simmering, uncover, reduce heat, and continue simmering, stirring occasionally, for 30 min or until desired thickness is reached.
Ladle into individual serving bowls and top with aged gouda, if desired.
