Hazelnut Cookies
Made with nutritious hazelnut meal and just a hint of natural sweetness from coconut sugar and chopped dates, these cookies won’t leave you on a refined carb hunger cycle.

Ingredients
- 2 Cups hazelnut meal
- 2 Tablespoons coconut sugar
- 2 dates pitted and chopped
- 1 egg
- 2 Tablespoons ghee melted
- 2 Tablespoons hazelnut oil
- 1 teaspoon vanilla
Instructions
- Preheat oven to 350℉, and line baking tray with parchment.
- Add all ingredients to medium mixing bowl, and stir until combined and large lumps of hazelnut meal are broken up.
- Roll into 1 inch balls (will make about 18). Place balls on tray 1.5 inches apart. Press each ball down to about ½ inch thickness.
- Bake until set – about 12-15 min.
- Once cooled, store in an airtight container.
Notes
You can sub hazelnut oil for avocado oil.
