Cornbread Croutons

These go great on a salad and in soups and bowls.

Ingredients

  • 12 mini corn muffins from above recipe
  • 1 tablespoon extra virgin olive oil
  • teaspoon salt
  • ½ teaspoon pepper
  • ¼ teaspoon garlic powder

Instructions

  • Preheat oven to 400℉. Cut muffins into ½ inch cubes.
  • Place cubes on baking tray lined with parchment. Drizzle with olive oil and sprinkle with salt, pepper, and garlic powder. Toss to coat evenly and spread out on tray.
  • Bake 10-15 min. until browned, being careful not to burn.
